Default add a leafs

Any advice on how to install add a leafs on the rear of a 07 1500, looked under the bed and it looks pretty easy, just wondering if there might be any hidden booby traps

Nope, installing add-a-leafs are pretty straight forward. However, you may want to look into air bags instead. I've done the leafs on two of my trucks and decided on the bags on this one. Leafs are good for towing with a heavy tongue weight or naturally, heavy loads in the bed, but suck big time when the bed is empty and the truck is bouncing all over the road for every little bump.
Bags are great as they are completely adjustable and no harder to install than the leafs. If you don't opt for all the fancy go-withs like on-board compressor, auto level kits, etc. they don't cost any more than add-a-leafs either...
